Need a refreshing dinner idea to beat the August heat?  Try a gorgeous and nutritious Nicoise salad and fruit tray this week.  Nicoise salads look fantastic and are easy to throw together with your favorite veggies and other ingredients arranged on a platter.  It’s also a great way to get picky little eaters in on the fun, since they can choose what they like instead of having to pick through a bowl of salad.  Finish it off with an arrangement of your family’s favorite chilled fruit, and you are sure to get a thumbs up all the way around!


Boston Lettuce

Hard-boiled eggs (peeled)

Tuna and salmon (cooked and in chunks)

Avocado (sliced)

Boiled red-skinned potatoes (quartered and cooled)

Haricots verts or French green beans (cooked and cooled)

Artichoke hearts (halved)

Cherry tomatoes (halved)

Radishes (sliced)

Black olives

Red Onion (sliced)

Cucumbers (sliced)

Colored bell peppers (sliced)

White or garbanzo beans (drained and rinsed)


½ shallot, minced, about 1 tablespoon (you can also use the whites of green on-ion or red onion)

1 tablespoon red wine vinegar

½ teaspoon Dijon mustard

3-4 tablespoons olive oil

Pinch of salt

Fresh herbs (optional, but very worth it)

Combine all ingredients and whisk together. You can also add everything to a jar, put a lid on it and shake vigorously.
